Ingredients:
1/2 cambotia squash
1 small glass of tahini
Juice of 2 lemons
4 garlic cloves
50g dates (about 4 dates)
1 small pomegranate
50ml of olive oil
Salt to taste (approximately 1 teaspoon)
Method of preparation:
Start by sanitizing the pumpkin well and cut it into thin slices using a mandolin (grater).
On a board, distribute the pumpkin blades and water them with olive oil. Grate 3 cloves of garlic over the slices and season with salt.
Bake in a preheated oven at 180 degrees Celsius for about 10 minutes, until the pumpkin slices are slightly crispy.
Meanwhile, prepare the tahini sauce . In the blender, place the tahini, dates, lemon juice, 1 clove of garlic and salt to taste. Beat until you get a creamy and homogeneous mixture.
To assemble the dish, arrange the pumpkin slices in the shape of flowers in a container.
Generously sprinkle the Roma seeds over the pumpkin flowers, adding a special touch to the dish.
Finish by drizzling the tahini sauce over the flowers, making sure each one is covered in the delicious sauce.
